The Prelude:  Strawberry Brie Waffle Bites

As you are cooking or entertaining, you always need that one little thing that you can pop into your mouth as you continue to cook, and to also serve your guests as they are awaiting The Main Attraction….it helps to build the anticipation of what’s to come!

Ingredients:

  • 12 strawberries (cut into 24 rings; tops and bottoms will not be used)
  • 2-3 waffles (cut into a total of 24 pieces)
  • 1 brie cheese wedge (cut into 24 pieces)
  • maple syrup, for drizzling or dipping

The Main Attraction:  Fried Chicken Thighs with Cheesy Grits with Kale & Hot Pepper Jelly

During this fall season, who wouldn’t want to cuddle up to something that warms the soul – and nothing does that better than comfort good.  Today’s main attraction is makes us think that we are in the South at grandma’s house sitting on a bar stool waiting for her to slide over the plate she specifically made for you with love, and as she slides the plate over she says, “here you go baby”.

Ingredients:

Chicken

  • 1½ cups buttermilk
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 pound skinless, boneless chicken thighs

Grits

  • Kosher salt
  • 1½ cups white grits (not instant)
  • 4 ounces cream cheese
  • 2 ounces finely grated Parmesan
  • Freshly ground black pepper
  • 2 bunches kale, or Swiss chard, ribs and stems removed, leaves torn into 2-inch pieces
  • 1 tablespoon hot pepper jelly, plus more for serving

The Finale:  Sparkling Apple Tea

Every brunch rightfully deserves a great cocktail.  Brunch without a cocktail is like not having brunch!  Today’s drink can either be served as a spirited cocktail or a mocktail.

Ingredients:

  • 2 black tea bags
  • 2 (3-inch) cinnamon sticks (plus more for garnish if desired)
  • One 25.4 ounce bottle sparkling apple cider
  • 1 ounce fresh juice from about 2 lemons
  • Garnish: additional cinnamon sticks
